I have tried sopapilla cheesecake, and thought it was great. When eating this cheesecake, you have to forget what you know about traditional cheesecake, because this one is anything but. It's an easy-to-make recipe that serves a crowd.

The recipe was originally posted on the blog My Yellow Umbrella . It was pretty simple so I decided to try it and take it over to my aunt's house for dinner. Let me tell you, EVERYONE LOVED IT. Mine didn't turn out quite as pretty as the above picture but it sure did taste good. Especially warm with a bit of vanilla ice cream. The hubs made me take the leftovers home so he could eat the rest over the week. My verdict: Pretty darn good but I'm not sure if it actually tastes like a sopapilla...still good but I don't really get the name. Maybe I didn't use enough cinnamon? I think I could improve it by using puff pastry dough instead of the crescent roll dough to give it more of that crispy texture. Still worth a try and definitely a great recipe to have in your arsenal when you have to cook for a potluck or party.
I tried this a few days ago and it was a big hit with everyone. I actually put it up on my blog too. :) Anyways, mine didn't look anything like the top picture either but it was still so good. I used the cut crescent rolls but mine didn't have the little cuts in it like it should have. I think next time it would be easier to use what you used. I didn't realize they made them without the cuts.
