BROOKSVILLE Minnie Swanson has always loved to cook.

While living in Michigan, Swanson would often cook for her family, putting her own spin on classic meals like pork chops, lemon pie and her specialty — vegetable soup.

"It's not like anybody else's vegetable soup," she said. "I put a lot of different things in it — large chunks of okra, cabbage and turnips."

Since moving to Atria Evergreen Woods eight years ago, Swanson's love for food still simmers each week with Kitchen Corner, a cooking program held every Tuesday at the senior living facility located on State Road 50.

The aroma of sweet sausages and buttery rolls filled the kitchen as Swanson, 92, and 10 of her fellow residents made sausage roll ups Tuesday afternoon with flaky crescent rolls wrapped around maple sausages.

Swanson said recipes vary from simple fruit parfaits to challenging fried bananas or soft pretzels with caramel dipping sauce. Her favorite recipe so far has been homemade banana bread.

While eating is a fun part of the program, Swanson said she mostly enjoys creating meals with her close friends that are delicious and rewarding.

"I love the fellowship and of course I love the food," she said. "We learn a little bit and I like just being together. This is more like a family here."

Hollie Taylor, engage life director, said the four-year-old program allows residents to make a variety of munchies that include traditional recipes, healthy snacks and residents' favorites.

Taylor, 21, added that Kitchen Corner is not only entertaining but also educational, as residents interact and discuss the significance of the recipes, details of the ingredients and their favorite food memories.

"We try to involve different things that are brain healthy — like blueberries are good for memory and carrots are good for the eyes," she said. "It gives them a challenge. It's engaging their brain and helping with their memory."

The smaller the pods the better because okra slimes when moisture hits the interior of the vegetable. Small ones are bite-sized and if you can cook them whole using high heat, you won't notice anything but their delicious, green-bean like flavor.

I liked both videos.  Why did you add cream?  Not only the cream does not add a meaningful taste, it does question the beauty of the green color.  Also, that's wonderful with pamagrante seeds, which was new too me.  I like the decoration with number of sprinkling seeds, but not that big piece at the top.

Finally, I loved and try soon.  I never had it with chicken either.  You are good.
